pan fired scallops

after watching season 7 of hell’s kitchen in a single marathon, i’ve been inspired to start cooking again.

so here are pan fired scallops in a lemon basil white wine sauce over angel hair pasta with parmesan.  ive really been studying how to better cook scallops. now i cook them for 1 minute per side in oil (never butter). i also ordered a black steel pan to give a good crust (as opposed to using stainless steel alclad pan or teflon pan.)

i also ordered a pasta maker and i’m going to experiment with that. buying pre-made pasta is just not the same.

whats amazing is how fast this cooks. once prep is done, it takes 4 minutes for the pasta and 2 minutes for the scallops and 2 minutes for the sauce. so in about 4 minutes…everything is done.  insane.
